Banana Drop Cookies



1¼ cup of sugar

2/3 cup butter

1 teaspoon of vanilla

1 cup of banana; well crushed

2 eggs, beaten

2¼ cup flour

2 teaspoons of yeast

¼ teaspoon of baking soda

½ teaspoon of salt

1/2 teaspoon of cinnamon

To garnish (optional)

1/4 cup of sugar and 1 teaspoon of cinnamon combined.


1) In a small bowl, combine the flour, baking powder, baking soda and salt and 1/2 teaspoon of cinnamon.

2) Cream the sugar, butter and vanilla until light and fluffy.

3) Add the eggs and beat well. Stir in the banana.

4) Slowly mix the dry ingredients into the wet ingredients. Chill for 30 minutes in the refrigerator.

5) Preheat the oven to 400 F.

6) Place teaspoon-sized balls of dough two inches apart on greased cookie sheets. Sprinkle with cinnamon / sugar mixture; if desired.

7) Bake for 8 to 10 minutes or until golden brown. Let cool for 2 minutes, then transfer to racks.
