Arizona Sunshine Lemon Pie



1 large lemon
4 large eggs
1 stick (8 tablespoons) melted butter
1 teaspoon pure vanilla
1½ cups sugar
1 unbaked piecrust

Preheat the oven to 350 degrees. Cut the lemon into small pieces, leaving the crust. Remove the seeds. In a blender or food processor, combine the lemon pieces, eggs, butter, vanilla and sugar until smooth and creamy. (It should be quite runny.) Pour into uncooked crust. Bake at 350 degrees for about 40 minutes.

If the crust becomes too brown, gently cover with foil and finish baking. Serve with a dollop of fresh whipped cream.
